Chicken Berry Salad

with Poppyseed Dressing

It's hard to believe this irresistible salad is actually a fat-burning recipe! Here we have grilled chicken, turkey bacon, your choice of berries, and a few raw walnuts for a little crunch and tossed together with your favorite salad greens. The home-made Poppyseed dressing is what brings all of the flavors together for a pretty "sweet" and healthy lunch or dinner meal.

Ingredients

  • Romain/spinach salad greens

  • 5-7 oz Chicken breast

  • 2 slices Turkey Bacon

  • Raspberries

  • Strawberries

  • 1 Tbsp Walnuts

  • Sliced purple onion

Poppyseed

dressing Ingredients

  • 1/2 c Avocado Oil

  • 1/3 c Stevia or Monk Fruit Sweetener

  • 1/3 c Apple Cider Vinegar

  • 1 tsp dry mustard

  • 1/2 tsp salt

  • 1 Tbsp red onion

  • 1 Tbsp poppyseed

step-by-step

Instructions

1. Grill the Chicken & Turkey Bacon

Season the chicken with your desired seasonings and grill it, or cook in a frying pan. Set in the fridge to cool. In the same pan, cook the turkey bacon. Cut into small strips and set aside to cool.

2. Prepare Salad Greens

Prepare salad greens. Cut Romain into bite-sized pieces. Add your other favorite leafy salad greens into the mixture. Keep in the fridge to keep crisp until serving time.

3. Prepare Ingredients

Gather raspberries and strawberries. Slice strawberries. Chop walnuts. Make the Poppyseed dressing.

4. Combine All Ingredients

At serving time, add chicken, turkey bacon, raspberries, strawberries, walnuts and onions to the salad greens. Toss gently until combined. Drizzle 2 Tbsp of Poppyseed dressing over salad and toss lightly. Serve immediately.

Time Saving Tip

This salad is a perfect meal to prep ahead. Prepare the chicken and turkey bacon and store in the fridge. Prepare salad greens so they are ready to go. Make the salad dressing recipe ahead of time. Store all ingredients separately and combine together when you're ready to eat.

Instructions

Add all of the ingredients into a high-speed blender. Blend at least 30 seconds. This dressing recipe makes a large batch.

Storage Instructions

Store dressing in an air-tight glass container. Keep refrigerated. Shake or stir vigorously before serving. Stays good for two weeks.
